Lumpia is the dish that appears at every Filipino gathering, and for good reason — they are irresistible. Thinner and crispier than Chinese egg rolls, lumpia use delicate spring roll wrappers that fry up to a golden, shattering crunch.

The filling is simple: ground pork, finely diced vegetables, and seasonings wrapped tightly and fried until golden. They disappear fast, so making a large batch is standard practice. Many Filipino families make hundreds at a time and freeze them for frying as needed.

Rolling the lumpia as tightly as possible without tearing the wrapper ensures they stay sealed during frying and cook evenly, with no air pockets that could cause uneven browning.

Ingredients

  • 1 lb ground pork
  • 1 cup carrots, finely diced
  • 1/2 cup water chestnuts, diced
  • 1 small onion, minced
  • 3 cloves garlic, minced
  • 2 tbsp soy sauce
  • 1 tsp sesame oil
  • 25 spring roll wrappers
  • Vegetable oil for frying
  • Sweet chili sauce for serving
  • Salt and pepper

Instructions

    Cook the pork, onion, and garlic until the pork is browned. Add the carrots, water chestnuts, soy sauce, sesame oil, salt, and pepper. Cook until the vegetables are tender. Let cool completely.
