Medjool dates stuffed with tangy goat cheese, wrapped in crispy bacon, and baked until caramelized. A three-bite appetizer with incredible flavor.
(Updated )
These stuffed dates hit every note—sweet, salty, tangy, and savory. They are embarrassingly easy to make yet always the first appetizer to disappear at a party.
Preheat oven to 400°F. Slit each date lengthwise and remove the pit.
Stuff each date with about 1 tsp goat cheese and a nut if using.
Wrap each date with a half-slice of bacon and secure with a toothpick.
Place seam-side down on a parchment-lined baking sheet. Bake 16-18 minutes until bacon is crispy.
Drizzle with honey, let cool 5 minutes, and serve warm.
Different flavor profiles
Thinner, saltier, and cooks faster
Use thin-cut bacon for crispier results.
Prep these a day ahead and refrigerate. Bake right before the party.
Try blue cheese for a bolder filling.
Refrigerate prepped (unbaked) dates for up to 1 day.
Reheat in a 375°F oven for 5 minutes.
