Instructions
- Sauté the onion and garlic:
In a large pot, heat the olive oil over medium heat. Add the diced onion and garlic, and sauté until softened, about 5 minutes. - Add the tomatoes and broth:
Pour in the crushed tomatoes and vegetable broth. Stir to combine, and bring the mixture to a simmer. Let it cook for 15-20 minutes. - Blend the soup:
