Mediterranean Quinoa Salad

Ingredients
- 1 cup quinoa
- 2 cups water
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/4 red onion, finely sliced
- 1/2 cup Kalamata olives, pitted and halved
- 1/2 cup crumbled feta cheese
- 1/4 cup fresh parsley, chopped
- 2 tbsp olive oil
- 2 tbsp fresh lemon juice
- Salt and pepper, to taste
Instructions
- Cook the quinoa:
Rinse the quinoa under cold water. In a medium saucepan, combine the quinoa and water. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes, or until the quinoa is fluffy. Let it cool. - Prepare the dressing:
In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper. - Assemble the salad:
In a large bowl, combine the cooked quinoa, cherry tomatoes, cucumber, red onion, Kalamata olives, feta cheese, and parsley. Pour the dressing over the salad and toss gently to combine. - Serve:
Garnish with extra parsley and serve chilled or at room temperature.
