Shrimp Scampi

Ingredients
- 12 oz linguine pasta
- 1 lb large shrimp, peeled and deveined
- 4 tbsp unsalted butter
- 2 tbsp olive oil
- 4 garlic cloves, minced
- 1/4 cup dry white wine (optional)
- 1/4 cup fresh lemon juice
- 1/4 tsp red pepper flakes (optional)
- Salt and black pepper, to taste
- Fresh parsley, chopped, for garnish
- Lemon wedges, for serving
Instructions
- Cook the pasta:
Bring a large pot of salted water to a boil and cook the linguine according to package directions. Drain and set aside. - Sauté the shrimp:
In a large skillet, heat the olive oil and 2 tbsp of butter over medium heat. Add the shrimp, season with salt and pepper, and cook for 2-3 minutes per side, until pink and opaque. Remove the shrimp from the skillet and set aside. - Make the sauce:
In the same skillet, add the remaining butter and minced garlic. Sauté for 1 minute until fragrant. Add the white wine (if using) and lemon juice, scraping up any browned bits from the pan. Let the sauce simmer for 2-3 minutes to thicken slightly. - Combine:
Return the shrimp to the skillet and toss to coat in the sauce. Add the red pepper flakes if desired. Toss the cooked linguine into the skillet, mixing everything well. - Serve:
Plate the shrimp scampi, garnish with fresh parsley, and serve with lemon wedges.
